  • 1 14 oz. bag coleslaw mix
  • 1/2 red bell pepper diced
  • 1/2 orange bell pepper diced
  • 3/4 cup mayonnaise
  • 1/3 cup sour cream
  • 1 13.75 oz. can black beans, rinsed and drained
  • 1 13.75 oz. can corn, rinsed and drained
  • 1/3 cup fresh cilantro minced, plus more for garnish
  • 1/4 cup lime juice
  • 1 jalapeño seeds removed and minced
  • 1 package taco seasoning

  • Prepare the Dressing: In a medium bowl, whisk together the mayonnaise, sour cream, lime juice, and taco seasoning until well combined. Place in the refrigerator to chill while you prepare the rest of the ingredients. This allows the flavors to meld together.
  • Mix the Vegetables and Beans: In a large bowl, combine the coleslaw mix, diced red and orange bell peppers, rinsed black beans, rinsed corn, minced cilantro, and minced jalapeño.
  • Combine and Toss: Pour the chilled dressing over the coleslaw mixture. Toss everything together until all the ingredients are thoroughly coated with the dressing.
  • Garnish and Serve: If desired, sprinkle additional minced cilantro over the top for extra freshness and color before serving.
