Clodhopper Candy: A Crunchy, Sweet Delight

  • 2 sleeves graham crackers crushed (about 2 ½ cups)
  • 1 ¼ cup lightly salted cashews roughly chopped
  • 12 oz white chocolate chips
  • Optional: 1/2 teaspoon cinnamon
  • Directions:
  • Prepare the Baking Sheet:
  • Line a baking sheet with parchment paper and set it aside. This will make cleanup easier and help prevent sticking.
  • Melt the Chocolate:
  • Place the white chocolate chips in a large microwave-safe bowl.
  • Microwave the chips in 30-second increments stirring after each interval, until they are completely melted and smooth. This usually takes about 1.5 to 2 minutes total.

  • Mix Ingredients:
  • Add the crushed graham crackers and roughly chopped cashews to the melted chocolate. Stir well to ensure that all pieces are evenly coated with chocolate.
  • If you’re using cinnamon, stir it in now for a hint of warm spice.
  • Spread the Mixture:
  • Pour the candy mixture onto the prepared baking sheet. Spread it out into a thin, even layer using a spatula.
  • Cool the Candy:
  • Allow the candy to cool at room temperature until it hardens. This will take about 30 minutes depending on the room temperature.
  • Break into Pieces:
  • Once fully cooled, break the candy into small, bite-sized pieces.
