  • Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, oat flour, baking soda, salt, and cinnamon. Set aside.
  • Mix Wet Ingredients: In a large bowl, whisk the melted butter with both brown and granulated sugars until fully incorporated. Add the eggs, lemon juice, and vanilla extract, mixing until smooth.
  • Combine Mixtures: Gradually stir the dry ingredients into the wet mixture, being careful not to over-mix. Gently fold in the chocolate chips and chopped walnuts.
  • Chill the Dough: Scoop 2-3 tablespoons of cookie dough onto parchment-lined baking sheets. Chill in the refrigerator for at least 1-2 hours, or up to 24 hours.
  • Prepare for Baking: Once chilled, remove the cookie dough from the fridge and gently flatten each cookie with your palm.
  • Bake: Preheat the oven to 350ºF (175ºC). Ensure cookies are spaced at least 1 1/2 inches apart on the baking sheets. Bake for 13-15 minutes, or until the edges are golden but the centers remain soft.
  • Cool: Allow the cookies to cool on the baking sheets for at least 15 minutes before transferring them to a wire rack to cool completely.
