Do Nothing Cake: A Delightfully Simple Treat

Ingredients

  • Ingredients:
  • For the Cake:
  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 2 cups sugar
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 2 1/2 cups 20 oz crushed pineapple, undrained

Instructions

  • Prepare the Pan: Grease a 9×13 inch (23×33 cm) baking pan and preheat the oven to 350°F (175°C).
  • Mix Ingredients: In a large bowl, combine flour, baking soda, sugar, eggs, vanilla extract, and crushed pineapple with its juice. Stir with a spoon until just combined.
  • Bake: Pour the batter into the prepared pan and smooth the top. Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  • Prepare for Frosting: While the cake is still hot, poke holes across the top with a skewer to allow the frosting to soak into the cake.
  • For the Frosting:
  • Cook Frosting: In a saucepan, melt the butter with the evaporated milk and sugar. Bring to a boil and cook for about 5 minutes, stirring frequently, until the mixture thickens slightly.
  • Add Extras: Remove from heat and stir in the chopped nuts and shredded coconut.
  • Finish: Pour the hot frosting over the hot cake, spreading it out to cover the surface evenly.
  • Serve and Enjoy
  • Allow the Do Nothing Cake to cool slightly in the pan before serving. This cake is best enjoyed warm or at room temperature, making it a fantastic dessert that’s both easy to make and a joy to eat. Its moist texture and rich topping will make it a hit at any gathering or a cozy night in.
