  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup confectioner’s sugar sifted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour 500 gr.
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon salt
  • 2 cups chopped pecans
  • 1/2 cup granulated sugar for decoration

  • Preheat Oven: Start by preheating your oven to 325 degrees F. This lower temperature helps the cookies bake evenly without browning too quickly.
  • Cream Together Ingredients: In a large mixing bowl, cream the butter, vegetable oil, 1 cup granulated sugar, and confectioner’s sugar until the mixture is light and fluffy.
  • Add Eggs and Vanilla: Incorporate the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Combine Dry Ingredients: In another bowl, mix together the flour, baking soda, cream of tartar, and salt. Gradually add these dry ingredients to the creamed mixture, mixing until just combined.
  • Add Pecans: Fold in the chopped pecans to distribute them evenly throughout the dough.
  • Shape and Sugar: Shape the dough into 1-inch balls, and roll each ball in the extra granulated sugar to coat.
  • Bake: Arrange the sugared dough balls on ungreased cookie sheets, spaced about 2 inches apart. Bake for 10 to 12 minutes, until the edges are golden.
  • Cool: Remove the cookies from the oven and transfer them to wire racks to cool.
