  • Monitor Temperature: Once boiling, insert a candy thermometer. Continue without stirring until it reaches 255°F.
  • Add Extras: Remove from heat. Stir in butter, your choice of flavoring extract, and food coloring if desired.
  • Prepare for Pulling: Pour onto a greased marble slab or a lined and greased baking sheet. Let cool until handleable, about 15 minutes.
  • Pull the Taffy: Butter your hands and pull the taffy until it becomes light in color and glossy, typically 10-15 minutes.
  • Shape and Cut: Stretch the taffy into a rope, cut into small pieces with greased scissors, and wrap each piece in wax paper.
