  • 2 lbs carrots peeled, scrubbed, and chopped into 3-inch pieces
  • 4 tablespoons butter melted
  • 4 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley minced
  • Kosher salt and freshly ground black pepper to taste

  • Preheat Oven and Prepare Baking Sheet: Preheat your oven to 425°F. Line a baking sheet with aluminum foil for easy cleanup.
  • Season the Butter: In a large bowl, combine the melted butter with the minced garlic, dried thyme, salt, and pepper.
  • Coat the Carrots: Add the chopped carrots to the bowl and toss them with the seasoned butter until they are well coated.
  • Add Parmesan: Sprinkle the grated Parmesan over the carrots and toss again to ensure the cheese is evenly distributed.
  • Arrange on Baking Sheet: Spread the carrots out in a single layer on the prepared baking sheet.
  • Roast the Carrots: Place the baking sheet in the oven and roast the carrots for about 25 minutes, stirring once halfway through the cooking time, until they are tender and lightly caramelized.
  • Final Seasoning: Once roasted, taste and adjust the seasoning if necessary. Sprinkle the roasted carrots with freshly minced parsley.
